Recipe | Homemade Jammy Dodgers

Good Evening All, I hope you have all had a good weekend. 

As valentines is coming up shortly I thought I would do a post suitable for everyone, if you are single and ready to mingle or happily settle down these Jammy Dodgers are the perfect Valentines gift or a yummy treat which is perfect with a cuppa tea. 


  • 250g Unsalted butter, softened
  • 104g Golden caster sugar
  • 2 tsp Vanilla extract
  • 300g Plain flour
  • Seedless raspberry jam
  • 2 tbsp Custard powder
  • 85g Icing sugar

1 - Heat the oven to 180c / 160 fan / gas 4 and line two baking trays with baking parchment. 

2 - Beat the butter and sugar together until pale and fluffy (I have used an electric whisk but you can use a manual one). Beat in the vanilla extract and then stir in the flour with ¼ tsp salt. Roll the dough out thickly, making sure to use a dusting of flour on your work surface as the mixture is rather sticky. 

3 - Cut out a large circular shape biscuits. Then on half of the biscuit use a smaller cutter to cut out a small hole in the centre of the biscuit. Place the biscuit with the smaller hole on top of the whole biscuit, this will create the classic Jammy Dodger classic shape.

4 - Spoon the raspberry jam into the holes of the uncooked biscuits.

5 - Bake for 8-12 mins until pale golden and crisp and then leave to cool on the trays.

6 - While they are cooling down, mix the icing sugar and a small amount of water so you have a runny icing ready to drizzle over the biscuits when cooled biscuits and then sit back and enjoy!
