Recipe | Homemade Jammy Dodgers

Good Evening All, I hope you have all had a good weekend.

As valentines is coming up shortly I thought I would do a post suitable for everyone, if you are single and ready to mingle or happily settle down these Jammy Dodgers are the perfect Valentines gift or a yummy treat which is perfect with a cuppa tea.

  • 250g Unsalted butter, softened
  • 104g Golden caster sugar
  • 2 tsp Vanilla extract
  • 300g Plain flour
  • Seedless raspberry jam
  • 2 tbsp Custard powder
  • 85g Icing sugar

1 - Heat the oven to 180c / 160 fan / gas 4 and line two baking trays with baking parchment.

2 - Beat the butter and sugar together until pale and fluffy (I have used an electric whisk but you can use a manual one). Beat in the vanilla extract and then stir in the flour with ¼ tsp salt. Roll the dough out thickly, making sure to use a dusting of flour on your work surface as the mixture is rather sticky.

3 - Cut out a large circular shape biscuits. Then on half of the biscuit use a smaller cutter to cut out a small hole in the centre of the biscuit. Place the biscuit with the smaller hole on top of the whole biscuit, this will create the classic Jammy Dodger classic shape.

4 - Spoon the raspberry jam into the holes of the uncooked biscuits.

5 - Bake for 8-12 mins until pale golden and crisp and then leave to cool on the trays.

6 - While they are cooling down, mix the icing sugar and a small amount of water so you have a runny icing ready to drizzle over the biscuits when cooled biscuits and then sit back and enjoy!

I hope you enjoyed reading a post that is a little different and have fun baking.

Lifestyle | Our Own Candle Company

I recently saw Leanne over at Nails and Teapots review candles from 'Our Own Candle Company'. Once I saw the packaging and the large range of scents they offered, I headed straight out and picked myself up a few to try.

Our Own Candle Company import candles from the U.S.A. They offer quality candles that have: no wasted wax, a great scent, clean burning and long lasting candles all at affordable prices.

As a huge lover of Yankee Candles I was sceptical on how well these candles would burn, last for and how intensive the scent would be. I picked up two candle jars: a large jar in Buttercream (£12) and a small jar in French Vanilla (£5).

Firstly the candles are presented in beautiful vintage glass jars, with screw top lids and vintage labels. The scents are incredible. They burn a strong and intense smell which fill the whole house. They also have a long burning time, which is a massive plus point for me. Also after you have burnt out candle you can reuse the glass jar for storing items.

Our Own Candle Company also offer Meltems which work in a similar way as the Yankee Tarts.

These candles are the same quality as Yankee but retail for a fraction of the price. If you are a candle lover like myself, I highly recommend you check out Our Own Candle Company.
